Smothered Green Beans

ingredients

  • 5 slices bacon, cut into 4 pieces
  • 1 large onion, chopped
  • 1 cup bell pepper, chopped
  • 1 large clove of garlic, minced
  • 1 heaping tsp. prepared roux
  • 3 bags frozen, cut green beans
  • 1 can Swanson’s Chicken Broth
  • 1 tbsp. dried parsley
  • 1/4 tsp. sweet basil
  • Salt & Cayenne Pepper, to taste

    In a small roaster, fry bacon until crisp and remove from pot. Add onion, bell pepper, and garlic, sauté until they get tender. Add roux and a little of the chicken broth, cook for about 10 minutes to dissolve roux. Add green beans, remaining chicken broth, parsley flakes, basil and salt and pepper to taste. Cover and cook on medium heat, stirring every 10 – 15 minutes cooked – about 1 hour or until beans are cooked and chicken broth has evaporated. Add crumbled bacon and stir before serving.

    If you can find Italian Green Beans, use them. The are better tasting than regular green beans
