ingredients

  • 1 cup onion
  • 1 cup green pepper, optional
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/2 teaspoon salt-(more)
  • 1/8 teaspoon pepper-(more)
  • 3 cups milk (use 2%)
  • 2 cups cheddar cheese, grated and separated
  • 1 tablespoon mustard
  • 2 pound bag frozen potato rounds
  • 1 pound canned ham-cut into bite size pieces OR 2 pounds Jimmy Dean sausage

    Saute onion and green pepper in butter until soft

  • 2

    Stir in flour, salt and pepper

  • 3

    Add milk-bring to boil stirring constantly

  • 4

    Simmer for 2 minutes or until thickened

  • 5

    Stir in 1 cup cheese and mustard

  • 6

    Cook until cheese melts

  • 7

    Remove from heat

  • 8

    Fold in potatoes and ham

  • 9

    Pour into greased casserole dish

  • 10

    Add remaining 1 cup of cheese and cover

  • 11

    Bake at 425° for 45 minutes

  • 12

    Uncover and bake an additional 15 minutes

Better if made the night before and baked in the morning!
