Ham and Potato bake
ingredients
- 1 cup onion
- 1 cup green pepper, optional
- 3 tablespoons butter
- 3 tablespoons flour
- 1/2 teaspoon salt-(more)
- 1/8 teaspoon pepper-(more)
- 3 cups milk (use 2%)
- 2 cups cheddar cheese, grated and separated
- 1 tablespoon mustard
- 2 pound bag frozen potato rounds
- 1 pound canned ham-cut into bite size pieces OR 2 pounds Jimmy Dean sausage

Saute onion and green pepper in butter until soft

Stir in flour, salt and pepper

Add milk-bring to boil stirring constantly

Simmer for 2 minutes or until thickened

Stir in 1 cup cheese and mustard

Cook until cheese melts

Remove from heat

Fold in potatoes and ham

Pour into greased casserole dish

Add remaining 1 cup of cheese and cover

Bake at 425° for 45 minutes

Uncover and bake an additional 15 minutes
