Mema's Banana Nut Bread
A special treat Mema would make for Thanksgiving. Sue has fond memories of eating it for breakfast or as an afternoon snack in the Fall.
ingredients
- 2 eggs
- 3 med. ripe bananas, peeled
- 2/3 cup sugar
- 1 cup Wesson oil
- 1/2 cup chopped walnuts
- 1 3/4 cups sifted all-purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt

Break eggs into medium bowl and beat well. Cut in bananas in 1 inch pieces and mash with fork. Add sugar, oil and nuts and beat together.

Sift flour, baking powder, baking soda and salt together and add to mixture.

Add nuts and mix until blended.

Pour into a greased loaf pan and bake in pre-heated 350 degree oven for 55-60 minutes.

Cool before slicing.
