Cozy Buffalo Bake
I particularly like to serve this around Christmas time for it is a nice change from the usual rich fare and looks particularly festive.
ingredients
- 1 lb ground buffalo
- 1 1/2 C Brown rice cooked in 3 C water
- 1/4 onion, thinly sliced
- 3 cloves of garlic, minced
- 3 C sliced Mushrooms
- 2 sweet peppers, thinly sliced
- 2 pkg frozen spinach
- 1 tsp each oregano, basil, anise seed, thyme and rosemary
- 1 can stewed tomatoes
- 1/4 C balsamic vinegar
- 1/2 C fresh/frozen cranberries
- ketchup for the top

Preheat oven to 375 degrees. Brown buffalo then add onion and garlic and cook until fragrant.

Add the vegetables and herbs and cook until softened. Add in tomatoes, spinach and vinegar. Cook 2-3 minutes.

In an oven-proof casserole dish put the rice in the bottom of the dish. Top with meat and vegetable mixture. Drizzle with the ketchup and cranberries and then bake for 30-45 minutes, or until bubbling.
