Coconut Lemon or Orange Squares

ingredients

  • Crust:
  • 1 large orange or lemon
  • 3/4 cup butter plus 2 tbsp
  • 1/4 cup lightly packed brown sugar
  • 2 cups flour
  • Filling:
  • 1 cup raisins
  • 2 tsp vanilla
  • 4 eggs
  • 2 cups lightly packed brown sugar
  • 1/2 tsp salt
  • 1 1/2 cups unsweetened coconut
  • 1 cup pecan or walnut pieces
  • 1 cup orange juice or lemon juice

    Line a 9“ x 13” pan with parchment paper. Finely grate the peel from orange or lemon and squeeze the juice out.

    Place half of peel in a large bowl. Set juice and remaining peel aside. In bowl with grated peel, add butter and brown sugar. Add flour to mixture using a wooden spoon to make crumbs. Press firmly into pan to form crust.

    Bake in oven 15 minutes at 350° till light brown.

    Stir raisins with vanilla. Cover and microwave on high for 30 seconds. In a large bowl, whisk eggs with sugar and salt until well mixed along with coconut, nuts and either lemon or orange juice, peel and raisins. Pour over warm crust and evenly spread.

    Bake in center of oven until center is slightly jiggly and top is dark golden about 30 - 35 minutes.
