Elaine's Radicchio Tapenade
ingredients
- 1 head radicchio (Italian red cabbage)
- 1 small onion, peeled
- Olive oil, as needed
- 1/3 cup olive oil
- 4 garlic cloves, crushed
- 1 Tbs white balsamic vinegar
- 1 cup black olives, finely diced
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup washed parsley (optional)
- Salt and freshly ground black pepper

Heat oven to 450 degrees. Coarsely chop radicchio and onion and toss with olive oil. Roast radicchio and onions in oven 10-15 minutes, until tender, stirring often. Do not burn.

Combine oil, garlic, and vinegar; toss with radicchio and onion. Add olives, grated cheese, and parsley. Toss well, add salt and pepper and toss again.

Spread on bread, crackers, steak, or roasted beef.
