Thai Salmon Cakes
ingredients
- 1 can (14 oz) pink salmon
- 1/2 c mashed potato or bread crumbs
- 1/4 c finely chopped onion
- 1/4 c coarsely chopped fresh cilantro, basil, mint, or dill
- 1 egg
- 1 Tb red curry paste
- 1 Tb fish sauce
- 1/2 tea salt
- 1/2 tea pepper
- 3 Tb vegetable oil

Drain salmon and place in medium bowl. Discard any bone or skin. Add mashed potatoes, onion, cilantro. In a small bowl stir and mash the egg, red curry paste, fish sauce, salt, and pepper until fairly smooth. Add to salmon mixture and combine well. Shape six to eight 3-inch patties.

Heat oil in a large skillet over medium heat. Gently the salmon patties and cook about 3 minutes on each side or until golden brown. Serve hot or warm.
