Peanut Sesame Noodles
ingredients
- 1 cup high quality peanut butter (crunchy)
- 1 1/2 cup boiling water
- 4-5 tbsp. rice vinegar
- 1 1/4 tsp. salt (just one)
- Two medium garlic cloves, minced
- 2 tbsp. sugar
- 1 tbsp. soy sauce
- 1/2 tsp. crushed red pepper (cayenne pepper)
- 4 tbsp. Chinese sesame oil
- 1 lb. linguini or vermicelli noodles
- 1 medium cucumber peeled and cut into thin strips
- 4 scallions finely minced whites and greens
- Peanuts for garnish (optional)

Place the peanut butter in a medium sized bowl. Add boiling water and mix patiently with a spoon until uniformly blended.

Stir in vinegar, salt, garlic, sugar, soy sauce, cayenne, sesame oil. Taste to adjust seasonings.

Cook the noodles until just tender add to the bowl with sauce and toss until combined. Add cucumber and scallions.
