Tomato Sauce

Sugo di Pomodori

ingredients

  • 2 28 ounce cans high quality whole, peeled Italian plum tomatoes
  • 5 tablespoons extra-virgin olive oil
  • 4 garlic cloves, bruised
  • 1/2 small onion, diced
  • 1/2 teaspoon sea salt
  • 6 large fresh basil leaves

    Puree canned tomatoes in food processor.

    Warm olive oil a pan. When the oil is hot, add onion and sauté on low heat until onion begins to color lightly. Add garlic pressing to release its juices sauté for about 2 minutes. Add pureed tomatoes and basil, bring to a boil. Boil, slightly covered, for 10 minutes, stirring occaisionally. Reduce heat and simmer for 20 minutes.

Tomatoes may be left whole and added with juice, then broken up with potato masher, for a chunkier sauce.
