"Down East" Potato Dressing

Makes 4 cups or 8 servings

ingredients

  • 1/2 stick butter
  • 1 large onion, peeled and chopped
  • 2 ribs celery, chopped
  • 2 c mashed cooked white potatoes (about 4 medium)
  • 1 c mashed sweet potatoes (about 2 small)
  • 2 c soft brown bread crumbs
  • 1/2 c water
  • 1 beaten egg
  • 1/4 fresh parsley
  • 1 tsp dried savory or majoram

    In a large skillet, melt butter.

    Add onion and celery and saute until tender but not brown.

  • 3

    Add mashed white and sweet potatoes, bread crumbs, water, egg, parsley, savory, salt and pepper.

    Stir well to mix in seasonings.

    Turn into well greased 1 1/2 quart casserole.

    Cover and bake at 375 for 35 minutes. Uncover for last 5 to 10 minutes to brown top.

notes

You can use 3 cups of white potatoes only if you like.
