CHOCOLATE DIPPED MACADAMIA NUT SHORTBREAD COOKIES

Makes 2-3 dozen cookies

ingredients

  • 1 cup unsalted butter
  • 3/4 cup sifted confectioner’s sugar
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp salt
  • 3/4 cup chopped macadamia nuts
  • 1 cup semisweet chocolate chips
  • 1 1/2 tsp vegetable shortening

    Beat butter, sugar and vanilla until light and fluffy. In separate bowl, sift together flour and salt. Gradually stir flour mixture into butter mixture until well blended. Stir in macadamia nuts.

    Shape dough into a roll 2 inches in diameter. Wrap roll in plastic wrap and chill for 1 hour or overnight.

    Cut roll into 1/2 inch thick slices. Bake on an ungreased pan at 300° for 20 minutes or until cookies begin browning. Remove from oven, cool on racks.

    Meanwhile, melt the chocolate and stir in shortening. Mix well. Dip one end of each cookie into chocolate mixture. Refrigerate cookies to harden chocolate. Store in a cool place.
