Potato Salad with Bacon & Eggs
I found this recipe in a House Beautiful magazine when we were in Colorado the summer of 2008. The photo looked beautiful and so I tried it for dinner that night. HUGE SUCCESS!!! It is now a family tradition.
ingredients
- 2 pounds medium-small red-skinned potatoes, scrubbed
- Kosher salt
- 1/2 pound thick-sliced applewood-smoked bacon
- 1 tablespoon imported Dijon mustard
- 2 tablespoons white wine or champagne vinegar
- Freshly ground black pepper
- 1/2 cup good olive oil
- 1/3 cup dry white wine
- 3 extra-large hard-boiled eggs, peeled
- 5 scallions, white and green parts, sliced
