Potato Salad with Bacon & Eggs

I found this recipe in a House Beautiful magazine when we were in Colorado the summer of 2008. The photo looked beautiful and so I tried it for dinner that night. HUGE SUCCESS!!! It is now a family tradition.

ingredients

  • 2 pounds medium-small red-skinned potatoes, scrubbed
  • Kosher salt
  • 1/2 pound thick-sliced applewood-smoked bacon
  • 1 tablespoon imported Dijon mustard
  • 2 tablespoons white wine or champagne vinegar
  • Freshly ground black pepper
  • 1/2 cup good olive oil
  • 1/3 cup dry white wine
  • 3 extra-large hard-boiled eggs, peeled
  • 5 scallions, white and green parts, sliced
