Couscous with Grilled Vegetables and Herbs
ingredients
- 9 oz. couscous
- 1/2 pint cold water
- 3 red peppers
- 1 handful asparagus
- 2-3 small patty pan squash
- 1 small bunch spring onions
- 3 handfuls herbs (coriander, mint, parsley)
- 1 recipe dressing
- salt & pepper, to taste
- red wine vinegar, to taste
- Dressing:
- 2 Tbl. lemon juice
- 5 Tbl. olive oil
- 1 tsp. salt
- 1 tsp. pepper
directions
Place couscous in a bowl with cold water. Blacken peppers on grill, then place in a sandwich bag for 5 minutes. Remove the skins and seeds and roughly chop. Grill asparagus and squash. Mix everything in a bowl. Add dressing and toss. Taste with salt, pepper, and red wine vinegar.
