Twice Baked Potatoes OR casserole
I can get even my pickiest eater to eat these potatoes.
ingredients
- 6 large baking potatoes, baked until tender
- 1 stick butter
- 1 1/2 to 2 cups sour cream, to taste
- 1 pkg Hidden Valley Ranch dressing mix
- 2 cups Finely shredded cheddar cheese
- 1 cup bacon bits
- 1 clove garlic, pressed
- salt and pepper to taste
directions
Bake potatoes; cool slightly. Either cut potatoes in half lengthwise, scooping pulp out leaving a thick-skinned shell, or peel potatoes. Put pulp of potates in mixing bowl along with butter. Mix well; add sour cream, HVR seasoning, and garlic. Add cheese and bacon; mix well. Either refill potato shells, or put potato mixture in a 1-1/2 quart casserole dish. Top with additional shredded cheese and green onions, if desired. Bake until pototoes are hot and cheese is melted.
