Chicken Piccata Pasta by Ethan
ingredients
- 1 lb. chicken breast (in small cubes)
- about 2 tbsp. olive oil
- 4 cloves of garlic
- 1/2 onion (diced)
- 1 1/2 tbsp. of flour
- about 1/2 tbsp. lemon juice
- 1/2 lb. rigatoni or penne
- 1/2 c. basil leaves shredded
- about 1 tbsp. capers
- about 1/3 c. white wine
- parmesan cheese
- (can also add red peppers or mushrooms)

• boil water, cooking pasta when ready
- 2
• on medium-high heat, saute onions and garlic in olive oil
- 3
• either cook chicken separately on Foreman, or cook in onion/garlic mixture, then remove the chicken and set it aside

• after about 3 min., add flour and cook about 1 min, mixing the flour in (add other veggies at this point, too)
- 5
• add wine, cooking off alcohol for about 5 min, then add lemon juice
- 6
• add chicken, capers, cheese and pasta to heat
