Chicken Piccata Pasta by Ethan

ingredients

  • 1 lb. chicken breast (in small cubes)
  • about 2 tbsp. olive oil
  • 4 cloves of garlic
  • 1/2 onion (diced)
  • 1 1/2 tbsp. of flour
  • about 1/2 tbsp. lemon juice
  • 1/2 lb. rigatoni or penne
  • 1/2 c. basil leaves shredded
  • about 1 tbsp. capers
  • about 1/3 c. white wine
  • parmesan cheese
  • (can also add red peppers or mushrooms)

directions

  • 1

    • boil water, cooking pasta when ready

  • 2

    • on medium-high heat, saute onions and garlic in olive oil

  • 3

    • either cook chicken separately on Foreman, or cook in onion/garlic mixture, then remove the chicken and set it aside

  • 4

    • after about 3 min., add flour and cook about 1 min, mixing the flour in (add other veggies at this point, too)

  • 5

    • add wine, cooking off alcohol for about 5 min, then add lemon juice

  • 6

    • add chicken, capers, cheese and pasta to heat
