Wheat Berry Salad

Hearty, healthy, wholesome salad any time of the year.
ingredients
The Bulk- 1 1/2 cup wheat berries
- 3 or 4 green onions, sliced
- 1 green pepper diced
- 8 cherry tomatoes, quartered
- 3 carrots julienned
- 8 stuffed green olives, sliced
- capers - as many as you like
- pine nuts, optional
- juice of one lemon
- sea salt and fresh ground pepper to taste
- 2 tablespoons Dijon mustard
- 1/4 cup cold-pressed olive oil
- 4 fresh garlic cloves, crushed
- rice vinegar, 1/4 cup
directions
Soak the wheat berries (bulk foods) with boiling water in a covered saucepan overnight. On the day of making the salad, heat the wheat berries in fresh water to a boil. Simmer for 45 minutes, covered. Drain and cool. Set aside. Combine all the ingredients and toss with the dressing.

It's truly worth the wait soaking the berries overnight.
