Wholesome Lemon Scones
Serve warm with the best quality jam.
ingredients
- 1 3/4 c Nutri Flour
- 4 tsp baking powder
- 1/4 c sugar
- 1/2 tsp salt
- 1/3 c cold butter diced
- 1/3 c dried cranberries or raisins
- Zest of 1 lemon
- 1 egg beaten
- 1/2 c milk
- 2 T milk or cream
- 2 T coarse sugar

In a large bowl, combine flour with baking powder, sugar and salt. Cut in butter until it is in tiny bits. Stir in cranberries.

Combine egg with milk and add zest. Add wet to flour mixture. Gather dough into a ball and knead gently together.

Pat dough on a floured work surface to a 9" circle. Brush with milk and sprinkle with coarse sugar. Cut into 8 wedges.

Transfer scones to a baking sheet lined with parchment paper.

Bake in a preheated 450 F oven for 12 to 14 minutes until lightly golden.
