Ham & Egg Casserole
This dish is perfect for a wedding shower, baby shower or family brunch.
ingredients
- 12 eggs scrambled soft
- 2 cups ham, cubed
- 2 lbs. frozen hash browns, cooked
- salt & pepper
- 1/4 cup white onion
- 1 lb. grated cheese, divided
- green onions for garnish
- non-stick spray
directions

Preheat oven at 350°F. Spray a rectangular Pyrex dish with non-stick spray or melted butter.

Layer ham on the bottom of the dish. Next, layer the hash browns, white onion, salt & pepper and half of the grated cheese.

Then, layer the scrambled eggs and remaining cheese. Sprinkle green onion on top of the casserole and place in the oven, uncovered.

Cook for 30 minutes and serve immediately.

This can also become a great vegetarian dish, or you can substitute with bacon or sausage.
