Chicken Cordon Bleu with White Wine Sauce
Tender chicken wrapped around ham & cheese makes a great dinner for eight.
ingredients
Chicken- 4 boneless chicken breasts (about 2 lbs.), skinned and split (8 pieces)
- 8 tsp. chopped parsley
- 8 thin slices mozzarella
- 4 thin slices boiled ham, cut into halves
- 1 tbsp. mayonnaise
- 1 tbsp. warm water
- 1/2 C. seasoned breadcrumbs
- White Wine Sauce (recipe follows)
- Parsley sprigs, chopped parsley & lemon wedges for garnish
- 3 tbsp. butter or margarine
- 3 tbsp. all-purpose flour
- 1 C. chicken stock
- 2/3 C. milk
- 3 tbsp. dry white wine
- Onion salt and pepper to taste
- Pinch of nutmeg if desired

Chicken Preparation

Pound chicken with meat mallet to 1/4" thickness. Sprinkle each piece with 1 tsp. of the parsley. Top each with 1 slice of cheese and 1/2 slice of ham. Roll up tightly; secure with wooden picks.

Mix mayonnaise and water in shallow dish. Roll chicken in mayonnaise mixture, then in breadcrumbs to coat. Place in greased baking pan.

Bake in preheated 425° oven until cooked through, 15-20 minutes. Remove wooden picks.

To serve, spoon White Wine Sauce over chicken rolls. Garnish with parsley & lemon wedges.
White Wine Sauce Preparation

Melt butter in medium saucepan over medium heat; stir in flour until smooth. Cook and stir 1 minute.

Gradually whisk in stock and milk until smooth. Stir in remaining ingredients; cook and stir until sauce thickens and bubbles for 1 minute.
