Corn Salad
Best with fresh Erie, County corn.
ingredients
- 5 ears corn, shucked
- 1/2 cup small diced red onion
- 3 Tab. Cider Vinegar
- 3 Tab. Olive Oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup chopped basil leaves
directions

Cook corn 3 min in boiling, salted water until starchiness is gone. Drain and immerse in ice water. When cool, cut kernels off cob.

Toss with vinegar, olive oil, salt and pepper.

Just before serving, toss in basil.

Serve cold or room temp.
