Fresh Home Made Pumpkin Pie
ingredients
- 2 to 3 large egg
- 2 c freshly cooked pumpkin - white
- 1 1/2 c light cream or evaporated milk
- 1/2 c sugar
- 1/3 c firmly packed brown sugar
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves or allspice
- 1/2 tsp salt

Preheat oven to 375 degrees.

Prepare 9" pie crust - hand made or store bought

Whisk thoroughly in a large bowl the eggs and then whisk in all other ingrediants in order listed.

Warm crust in the oven until it is hot to the touch, letting the filling stand at room temp in the meantime.

Pour pumpkin mixture into the crust and bake until the center of the filling seems set but quivery, like gelatin, 35 to 45 minutes.

Let cool completely on a rack.

Serve cold, at room temperature, or slightly warmed.
