Zucchini and Potatoes with Parmesan Crust
ingredients
- 4 Small new potatoes
- 2 Tbsp butter
- 1 clove garlic, minced
- 1 tsp chopped fresh thyme
- 1 tsp chopped fresh rosemary
- 2 small zucchini, cut in half lengthwise
- 1/4 cup grated parmesan cheese
- pinch of salt and pepper

Bring a medium post of water to a boil over high heat. Add the potatoes and cook until tender, about 8-10 minutes. Drain and cool potatoes, then cut in half.

Add butter, garlic, thyme and rosemary to a medium saute pan over medium heat. Meanwhile, season the cut sides of the zucchini and potatoes with salt and pepper. Place zucchini and potatoes, cut side down, in the melted butter. Cook 12-15 minutes until golden brown.

Preheat broiler. Line a baking sheet with foil. Place browned zucchini and potatoes on the baking sheet, cut side up. sprinkle the tops with parmesan. Broil about 4 minutes until cheese is golden brown.
