Cumin Soy Marinated Pork Chops
ingredients
- 4 pork chops (preferably loin, on the bone)
- 1 handful parsley, chopped
- Marinade:
- 1 Tbsp cumin seeds
- 2 small dried hot peppers
- 1 Tbsp dry mustard
- 2 cloves garlic
- juice of 1 lime
- 100 mL tamari soy sauce
- ground black pepper to taste

1. Combine cumin seeds, hot peppers and mustard powder in a food processor and pulse until pulverized.

2. Add garlic, lime and soy sauce and pepper to taste and pulse until garlic is chopped into a pulp. The mixture should form a loose emulsion.

3. Place pork chops in a large freezer bag. Pour marinade over the chops and leave in the fridege for at least 2 hours. (In lieu of a freezer bag, substitute a pan and cling wrap).

4. Remove chops from marinade and grill on a very hot barbecue or broil.

5. Let the chops rest for at least 5 minutes, sprinkle with parsley and serve.
