Vera's (Maggie's) Potato Casserole
A must-have for any Holm holiday.
ingredients
- 8-12 russet potatoes, peeled
- 1 medium container sour cream
- 1 can condensed cream of celery soup
- 1 bunch green onions, sliced
- 2 cups shredded cheddar cheese
- 2 T butter
- S & P
directions
Preheat oven to 350. Boil potatoes until tender, drain. Place into a large greased casserole dish. Add butter and mix througoughly, smashing potatoes, leaving large chunks behind. Salt. Combine sour cream, onions, soup, and 1/2 the cheddar cheese in a seperate bowl. Add mixture to the potatoes. Fold. Sprinkle remaining chees on top. Cover with aluminum foil and bake for 45 minutes-1 hour or until mixture is hot and bubbly in the center. Remove foil and broil until top has a beautiful golden brown appearance. SErve immediately.
