Grandma Flo's Baptist Peanut RollsKaren Seavers
Delightful cake squares glazed and rolled in peanuts.

- 20 min (to prepare cake. 30 minutes to glaze.)
- 4 eggs
- 1 cup boiling water
- 2 tsp baking powder
- 1 1/4 tsp vanilla
- 2 cups sugar
- 2 cups flour
- 1/4 tsp salt
- 1 stick plus 1 Tbs softened butter
- 1 1/2 lbs. confectioners sugar
- 1/2 +/- cup milk
- 1 1/2 tsp vanilla
- 1 1/2 lbs dry roasted unsalted peanuts chopped into small pieces
Preheat oven to 350 degrees.
Beat eggs until light and fluffy. Add sugar gradually. Add water and vanilla then dry ingredients. Bake in 9x13 pan for 25-30 min“tes. Cool cake then cut into 2” squares. Glaze squares and roll in chopped peanuts.
Glaze: Mix together butter, confectioners sugar, milk, and vanilla adjusting milk to achieve a thin glaze.
