Marinated Green Bean Salad
Delicious green bean salad served hot or cold.
ingredients
- 1/2 large red onion thinly sliced
- 1/3 cup extra virgin olive oil
- 1/4 cup red wine vinegar or
- Italian herb flavored wine vinegar
- Salt and fresh ground pepper to taste
- 2 garlic cloves, pressed
- 2 pounds fresh green beans, trimmed

Bring large pot of water to boil while preparing vegetables. Place sliced onions in colander over the sink. In small bowl, stir together the oil, vinegar, salt and pepper until combined. Stir in garlic. Set aside.

Add green beans to boiling water. Cover and cook 5-10 minutes until beans are bright green (do not overcook). Pour beans and hot water over onions in colander. Rinse under cold water to cool. Let drain well.

Place beans and onions in large bowl or ziploc. Pour dressing over vegetables and mix. Chill for 4 hours or overnight mixing occasionally.

Serve at room temperature or warm.
