Greek Chicken Salad
ingredients
- 2 whole wheat pitas
- 8 cups shredded romaine
- 1 1/2 cups cherry tomatoes
- 10 oz. can chickpeas, drained and rinsed
- 1/2 cup red onion, thinly sliced
- 1/2 cup radish, thinly sliced
- 1 green pepper, cut in strips
- 1/2 cucumber, peeled and sliced
- 2 cups roasted chicken
- 1/3 cup feta, crumbled
- 1/4 cup kalamata olives, pitted
- 1/4 cup fresh dill
- 2 Tbl. lemon juice
- 1 Tbl. olive oil

Preheat oven to 200°.

Wrap pitas in foil and place in oven.

Toss all ingredients except lemon juice and olive oil in a bowl. Whisk lemon juice and olive oil, drizzle over salad, toss, and divide among 4 plates. Quarter pitas and serve alongside salad.
