DATE-NUT PINWHEEL COOKIES
ingredients
- 2 cups brown sugar
- 1 cup butter or margarine softened
- 2 eggs
- 3 1/2 cups all-purpose flour
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. cream of tartar
- Filling:
- 1 8 oz package dates, chopped
- 1 cup very finely chopped walnuts
- 1 cup sugar
- 1 cup hot water

Combine brown sugar & butter, creaming until light & fluffy; beat in eggs. Combine flour, soda, cream of tartar & salt; stir into creamed mixture. Add vanilla & mix well.

Divide into three parts. Roll each piece to a 12" sq. on wax paper. Spread each with filling and roll like a jelly roll. Wrap each roll in wax paper and chill overnight in refrigerator. Cut into 1/4 slices. Bake at 350 degrees for 8 to 10 min.

FILLING: Cook dates, sugar & water together until thickened - about 6 to 8 minutes, stirring constantly. Remove from heat and stir in walnuts. Set aside to cool.
