Old Fort William Bread
ingredients
- 1 cup warm water
- 1 tbsp. sugar
- 1 tbsp yeast
- 2 cups warm water
- 4 tbsp. sugar
- 1 1/2 tsp salt
- 1/2 cup lard
- 3 cups whole wheat flour
- 4 cups white flour

Dissolve 1 tbsp. sugar in 1 cup warm water. Add yeast and let stand 10 minutes. Meanwhile, in a bowl, mix flour, sugar, salt together; rub in lard until smooth.

Add 2 cups warm water and the yeast mixture to the dry ingredients. Mix well. Turn onto a well floured board and kneed until smooth. Approx. 10 minutes. Let dough rise in a large bowl until it doubles in size. Punch down dough, form into loaves, place in greased pans and let rise until doubled in size. Bake at 350° for 30 - 40 minutes.
