ingredients

  • 2 teaspoons olive oil
  • 2 yellow onions, chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef (or buffalo)
  • 1 pound pork or turkey sausage
  • 3/4 pound sirloin, cubed
  • 1 can dark beer
  • 1 large can diced tomatoes
  • 2 (6-ounce) cans tomato paste
  • 1 can beef broth
  • 1 cup strong coffee
  • 1 cup red wine
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon cocoa
  • 1 teaspoon oregano
  • 1 teaspoon cayenne
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 4 (15-ounce) cans kidney beans
  • 4 chili peppers
  • 1/2 cup cilantro

    Heat oil in a Dutch oven. Cook onions and garlic until softened. Add meat and cook until browned. Add tomatoes, beer, coffee, tomato paste, broth, and wine. Add spices and two cans kidney beans and peppers. Simmer 1 1/2 hours.

    Add remaining 2 cans kidney beans. Simmer for 30 minutes.
