Pumpkin Raisin Bars
Very easy to make and delicious
ingredients
- Bars:
- 2 cups all purpose flour
- 2 cups sugar
- 2 tsp baking powder
- 1 tsp each baking soda, cinnamon and nutmeg
- 1/2 tsp each salt and ground cloves
- 1 cup oil
- 4 eggs
- 1 (15 oz) can (2 cups) pumpkin
- 1/2 cup each chopped nuts and raisins
- Frosting:
- 1/3 cup softened butter
- 1 (3 oz) package of cream cheese, softened
- 2 cups powdered sugar
- 1 Tbsp milk
- 1 tsp vanilla

Heat oven to 350 degrees F

Grease 15“ X 10” X 1" baking pan

Combine all bar ingredients, except nuts and raisins in a large bowl.

Beat at low speed until moistened

Beat 2 minutes at medium speed

Stir in nuts and raisins

Pour into greased pan

Bake for 25-30 minutes or until toothpick comes out clean.

Frosting:

Combine all frosting ingredients in a small bowl and beat until smooth.

Spread cream cheese frosting over bars and store in refrigerator.
