Momsie Diane's Spaghetti and Meatball and Sausage

ingredients

meatballs
  • 1 1/2 lbs ground chuck
  • 3/4 c dry bread crumbs
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, pressed
  • 1/2 c milk
  • 1 egg
  • 2 tbls grated parmesan cheese
  • 1 tbls snipped parsley
  • 1 1/2 tsp salt
  • 1/2 tsp dried oregano leaves
  • 1/2 tsp fresh ground pepper
sausuage
  • 1 big sweet onion, chopped
  • 4 cloves of garlic chopped or pressed
  • 2 tbls olive oil
  • 1 lb sweet italian sausage
sauce
  • 15 oz can tomato sauce
  • 28 oz can plum tomatoes
  • 2 x 12 oz cans tomato paste
  • 1 c water
  • 1 c dry red wine (or 1/2 c wine + 1/2 c water)
  • 1 tbls salt
  • 2 tbls sugar
  • 1 tbl fennel seed
  • 1 tsp oregano
  • 2 whole bay leaves
  • 1 tbls basil
  • 1-2 tsp red pepper flakes
  • 1 tbls parsley

directions

meatballs

mix all ingredients. shape mixture into 1 1/2” balls. place in ungreased 15 1/2 x 10 x 1” jelly roll pan. cook uncovered @ 350° until light brown (15-20 min).

sausage

fry the onion and garlic in the olive oil until tender. remove skin from sausage, cut into bite size pieces, and fry until pink color is gone. drain in paper towel in colander and set aside.

sauce

combine cans of tomatoes, sauce, and paste into large pot. add the water and red wine. when hot, add all the spices and stir every half hour. add sausage and meatballs. simmer for 3 hours on low. DO NOT BOIL.
