3 Bean Chili
While a lot of people will claim that REAL chili doesn’t have any beans. It tastes like chili to me, and happens to be my favorite.
ingredients
- 1 & 1/2 lbs. ground beef, or turkey;
- 3 - 15 oz. cans of beans - red kidney, pinto, navy (or any 3 kinds you might prefer);
- 1 - 15 oz. can of chick peas;
- 1 large onion, large dice;
- 1 or 2 jalapeno peppers, fine dice (can take out ribs, and seeds to decrease the heat);
- 1 - 28 oz. can of tomatoes;
- 1 bottle of a dark beer;
- 3 oz. tomato paste;
- 2 TBSP. ground cumin;
- 2 TBSP. ancho chili powder
- 2 TBSP. dried oregano;
- 2 dried bay leaves;
- 2 TBSP. olive oil
- sour cream (garnish)
- chopped chives (garnish)
- salt and pepper to taste
directions
Place oil in deep saute pan. When oil is hot, add meat, chopped onions, chopped jalapenos, cumin, ancho chili powder, and tomato paste. When meat has browned, add the tomatoes, oregano, beer, bay leaves, salt and pepper. Partially cover, and simmer for 35 minutes. Meanwhile, open cans of beans and chick peas. Drain, and rinse. After 35 minutes, add the beans and chick peas to the saute pan, and cook for an additional 15 minutes. Serve with a TBSP. of sour cream on top, and sprinkle on some chopped chives. Serve with a few good crackers, or nachos.
