BROCOLLI RABE WITH RAISENS AND PINE NUTS
WITH IT’S SLIGHT BITTERNESS , BROCOLLI RABE TAKES WELL TO ASSERTIVE FLAVORS. A CLASSIC ITALIAN DISH IT IS USUALLY MADE WITH LOTS OF GARLIC AND RED PEPPER FLAKES. THIS IS A MELLOWER DISH USING RAISENS AND SHERRY.
ingredients
- 1 TABESPOON OLIVE OIL
- 1/4 CUP PINE NUTS (WALNUTS OR PECANS)
- 1/4 CUP GOLDEN RAISENS (DRIED CRANBERRIES)
- 1 CLOVE MINCED GARLIC
- 1/3 CUP DRY SHERRY OR WHITE WINE
- 2 TO 2 1/2 POUND BUNCHES BROCOLLI RABE
- SEA SALT AND FRESHLY GROUND PEPPER

PUT THE OLIVE OIL IN A MEDIUM SKILLET OVER MEDIUM HEAT. TOAST THE PINE NUTS, STIRRING, UNTIL BARELY GOLDEN, 1-2 MINUTES. ADD THE GARLIC, SAUTE 1-2 MINUTES. ADD BROCCOLI RABE, SHERRY AND RAISENS,COVER PAN. STIRRING OCCASIONALLY COOK 7-10 MINUTES, UNTIL TENDER.
