WITH IT’S SLIGHT BITTERNESS , BROCOLLI RABE TAKES WELL TO ASSERTIVE FLAVORS. A CLASSIC ITALIAN DISH IT IS USUALLY MADE WITH LOTS OF GARLIC AND RED PEPPER FLAKES. THIS IS A MELLOWER DISH USING RAISENS AND SHERRY.

ingredients

  • 1 TABESPOON OLIVE OIL
  • 1/4 CUP PINE NUTS (WALNUTS OR PECANS)
  • 1/4 CUP GOLDEN RAISENS (DRIED CRANBERRIES)
  • 1 CLOVE MINCED GARLIC
  • 1/3 CUP DRY SHERRY OR WHITE WINE
  • 2 TO 2 1/2 POUND BUNCHES BROCOLLI RABE
  • SEA SALT AND FRESHLY GROUND PEPPER

    PUT THE OLIVE OIL IN A MEDIUM SKILLET OVER MEDIUM HEAT. TOAST THE PINE NUTS, STIRRING, UNTIL BARELY GOLDEN, 1-2 MINUTES. ADD THE GARLIC, SAUTE 1-2 MINUTES. ADD BROCCOLI RABE, SHERRY AND RAISENS,COVER PAN. STIRRING OCCASIONALLY COOK 7-10 MINUTES, UNTIL TENDER.
