Sunshine Potatoes
ingredients
- 6-8 potatoes
- 1 c cream of mushroom soup
- 1 c sour cream
- 1/2 c butter
- 1 1/3 c grated cheddar cheese
- 1/3 c finely chopped onion
- 1 c corn flakes

Parboil potatoes 15-20 minutes. Grate potatoes into a 8 x 11" pan.

Mix all other ingredients over medium heat until butter and cheese is melted.

Pour over potatoes in pan - pat down with a fork. Top with crushed cornflake crumbs.

Bake 350° for 1 hour.
