Fruitcake Cookies

These fruitcake cookies will be more appreciated than the fruitcake they are made for!! You can use any type of candied fruit or nuts to make them your own. They are a very versatile cookie! This recipe makes a LOT of cookies. A half recipe is usually plenty. Cooking Notes: I substitute mixed candied fruit for the pineapple, and I make the cookies a little larger. However, large cookies mean longer cooking time. The dough can also be shaped into a roll wrapped and placed in the freezer. Then, just slice the roll into cookies later.

ingredients

  • 1 lb candied cherries
  • 1 lb dried pineapple
  • 1 lb raisins
  • 1 lb dates
  • 3 qts chopped pecans
  • 1 1/2 C. dark brown sugar
  • 1 lb butter, softened
  • 6 eggs
  • 3 tsp vanilla
  • 3 tsp lemon juice
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 4 C. self-rising flour
