Count's Stuffed Manicotti

- 14 manicotti
- 1 lb. ground beef
- 1 lb. ground pork sausage
- 3 cloves garlic
- 4 large onions
- 28 oz tomato sauce
- 1 cup water
- 1/2 cup wine
- 6 oz tomato paste
- 2 tsp. Italian seasoning
- 1 tsp. red peppers
- 1 tsp. chili powder
- 1 tsp. sugar
- Salt and pepper
- 1 lb. fresh mushrooms
- 4-diced pepperoni
- 16 oz grated mozzarella cheese
- 32-oz ricotta cheese (or cottage cheese)
- 2 Tbs. dried parsley
- Onion salt
- Italian seasonings
- Salt & pepper

Boil 14 Manicotti.

Prepare a sauce of 1 lb. ground beef, 1 lb. ground pork sausage, 3 cloves garlic, 4 large onions, 28 oz tomato sauce, 1 cup water, 1/2 cup wine, 6 oz tomato paste, 2 tsp. Italian seasoning, 1 tsp. red peppers, 1 tsp. chili powder, 1 tsp. sugar, salt, pepper and 1 lb. fresh mushrooms.

In a bowl combine 4-diced pepperoni, 16oz grated mozzarella cheese, 32-oz ricotta cheese (or cottage cheese), 2 Tbs. dried parsley, onion salt, Italian seasonings, salt & pepper.

Stuff the manicotti with the cheese filling.

Layer and pour on the sauce.

Top with foil and bake at 375 degrees for 45-60 minutes.

If cold 375 degrees for 90 minutes.
