A+ Butter Crunch Candy
Nancy Dean treated me to this wonderful homemade candy several years ago, and I have not forgotten how delicious...and simple.
ingredients
- 1 Cup Butter
- 1 Cup Sugar
- 1 teaspoon Vanilla
- 1 Cup unblanched Almonds finely chopped or sliced
- 1/4 teaspoon Salt
- 12 oz real Chocolate Pieces (milk or semisweet)
- 2 Cups finely ground Walnuts or Pecans

On foil lined baking sheet arrange almonds in a single layer 12 x 7 inch, set aside.

In a heavy 2 qt. saucepan combine butter, vanilla, sugar and salt. Cook on high heat stirring constantly with dry wooden spoon until butter is melted.

Continue cooking and stirring 5 to 7 minutes or until candy is the color of unblanched almonds.

Immediately pour candy, without scrapping pan, over almonds covering all the nuts. Cool completely.

Meanwhile, on top of double boiler, melt chocolate over hot (not boiling) water.

Break toffee into large pieces

Using a fork drop each piece of toffee into melted chocolate, spreading into a thin even layer, Scrape off excess.

Coat each piece lightly with ground walnuts or pecans.

Place on wax paper and set. Break into serving size pieces.

Store in refrigerator.
