Christmas Rice

We have enjoyed this rice at Christmas lunch for many years. This is an original Becky recipe.

ingredients

  • 1 stick butter or margarine
  • 1 cup finely chopped red pepper
  • 1 cup finely chopped green papper
  • 1 cup finely chopped celery
  • 1 cup finely chopped onion
  • 1 cup finely chopped parsley
  • 4 small bags (1 cup) Boil-in-Bag rice
  • 32 oz. chicken stock
  • 2 cups water
  • 1 cup chopped pecans
  • salt and pepper to taste

directions

Melt butter. Saute peppers, celery and onion until el dente. Remove from heat, stir in parsley. Bring broth and water to boil. Prepare rice according to package directions. Drain. Mix sauteed vegetables into drained rice. Salt and pepper to taste. Cover with chopped pecans. Bake in 350° oven until heated through.
