ingredients

  • 6 hard cooked eggs, chopped
  • 1 large red onion, diced
  • 2/3 cup sour cream
  • 1/2 lemon, thinly sliced
  • 3 Tbsp. mayonnaise
  • 8 oz. cream cheese, softened
  • 3 1/2 oz jar black lump fish caviar
  • parsley for garnish

    Combine eggs and mayonnaise. Spread mixture on the bottom of a well greased 8" spring form pan. Sprinkle layer with onion.

    In a bowl, combine cream cheese and sour cream, beat until smooth. Drop mixture in spoonfuls onto onion layer and spread evenly. Cover and chill overnight.

    Just before serving, top pie with caviar layer. Run knife around sides of pan and remove sides. Garnish pie with lemon and parsley and serve immediately with sliced bread or crackers.
