Vegetarian Pesto Sandwich
Healthy and absolutely tasty grab and go lunch. Add a layer of sliced boiled eggs to punch up the protein.
ingredients
- 8 slices of cape seed loaf or any whole grain loaf
- 1 avocado, pitted and peeled, thinly sliced to serve 4
- 4 medium slices of roasted pepper, rinsed and patted dry
- 1 tomato, seeds removed, sliced to serve 4
- Cheddar cheese slices
- Pesto Mayo:
- 1/4 cup of mayonnaise
- 2 pcs. olive oil packed sun-dried tomatoes, very finely sliced
- 1 tbsp prepared pesto
- salt and pepper to taste

Make the pesto mayo:

Mix the mayonnaise, pesto, finely sliced sun-dried tomatoes in a bowl. Mix well and season with salt and pepper to taste.

Spread the pesto mayo mix to each piece of cape seed loaf. Reserve 4 slices.

Layer the avocado slices, tomato, roasted pepper and cheese in the remaining 4 slices of bread.

Top with the reserved slices of bread to finish the sandwich.
