Crab and Avocado Salad
ingredients
- 3 tablespoons orange juice (I think I used orange/tangerine)
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 1 teaspoon grated orange peel
- 3 tablespoons olive oil
- 1/2 red onion, sliced paper thin (I actually tossed in some onion, then thought it may be too strong and then pulled the onion out. So it only had a hint of onion)
- 1 lb fresh lump crabmeat
- 1 large mango (I used Kiwi due to allergies)
- 1 large avocado
- lettuce leaves
directions
Combine first 4 igredients, whisk in oil, season with salt and pepper, mix in onion (and if you’re me, take out onion), let marinade 15 minutes. Mix crab, mango, and avocado. Mix in dressing. Scoop on salad leaves.
