Snowballs & Crescent Moons

- 1 2/3 cups confectioners’ sugar, divided
- 1 1/2 tsp vanilla extract
- 2 1/4 cups all purpose flour
- 1/4 tsp salt
- 1 cup finely ground walnuts (you could use pecans, pistachios, almonds, and even hazelnuts)

Preheat the oven to 400 degrees. In a medium bowl, cream the butter and 2/3 cup of confectioners’ sugar. Add the vanilla extract. Stir in the flour, salt, and finely ground nuts.

To make crescents, roll a tablespoon of the dough into a 1- by 3-inch cylinder. Shape and flatten the dough into a crescent. For snowballs, roll the dough into 1-inch balls. Place the balls 1 inch apart on an ungreased baking sheet. Bake the crescent moons for 10 to 12 minutes and the snowballs for 12 to 14 minutes, or until lightly browned around the edges. Cool for 2 to 4 minutes before dusting with the remaining confectioners’ sugar. Once the cookies are completely cooled, dust them again with sugar.
