Van Gordon Style Potato Salad
ingredients
- sm. red potatoes
- 1/2 red onion, chopped
- large pile of parsley, chopped
- 1 clove garlic, chopped
- 1/4 t. salt
- 2 T. wine vinegar
- 1/4 t. Dijon mustard
- 9 T. olive oil (scant 1/2 c.)
- freshly ground pepper

Make vinaigrette dressing first: Mash garlic and salt together. Stir in vinegar and mustard. Gradually beat in oil. Grind on pepper.

Cook red potatoes in boiling, salted water until tender. Drain and chop into potato salad size pieces.

Mix potatoes with onion and mix in enough dressing until potatoes are well coated and dressing has been absorbed.

Mix in parsley and season with salt and pepper to taste.
Source: Depending on amount of potatoes used, you may need to make more than one batch of dressing.
