Easy Potato Soup
ingredients
- 2 pieces bacon
- 2 lb. bag frozen hash brown potatoes
- 1 onion, chopped
- 2 cans cream of chicken soup
- 2 soup cans water
- 1 soup can milk
- 1 can chicken broth
- 2 cups shredded cheddar cheese
directions
In dutch oven, cook bacon until crisp. Remove bacon to paper-towel lined plate. Add chopped onion to bacon grease & cook until tender and slightly browned. Remove excess bacon grease. Add remaining ingredients, except cheese, and simmer at least 1 hour. Add cheese and simmer for 15 minutes longer. Serve with additional shredded cheddar and ranch crackers.
