Christmas Pumpkin Chocolate Chip Bread
I’ve added chocolate chips and extra cinnamon to spice up this tasty treat for the holidays or any other day!
ingredients
- 3 cups sugar
- 1 cup canola oil
- 4 eggs
- 3 1/2 cups all-purpose flour (unbleached is best)
- 2 tsp. baking soda
- 1 1/2 tsp. kosher salt
- 1 1/2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 2/3 cup water
- 1 15-oz. can pumpkin puree
- 1 bag semi-sweet chocolate morsels

1. Grease bottom of loaf pans. Preheat oven to 350 degrees.

2. In a very large mixing bowl, beat sugar and oil with an electric mixer on medium speed. Add eggs and beat well; set aside.

3. In another large bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. Alternately add flour mixture and water to sugar mixture, beating on low speed after each addition just until combined. Beat in pumpkin. Then, add an entire package of semi-sweet chocolate morsels. Stir gently. Spoon batter into prepared pans.

4. Bake reg./large loaves for 55-65 minutes or mini loaves for 30 minutes or until wooden toothpick inserted near center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool completely on wire racks. Wrap and store overnight before slicing.
