Thai Green Curry Chicken

ingredients
- 1 large onion, sliced in half moons
- 1 can coconut milk
- 1-2 tsp green curry paste
- 1 can water chestnuts, drained and chop
- 2 T. brown sugar
- 4 chicken breasts, cut into 1 inch cube
- 1 bag of frozen green peas
- chicken stock
- 1 1/2 cups rice

In a frying pan, saute onions. While the onions are sauteing add 3T chicken stock and a sprinkling of brown sugar to carmelized the onions. Cover til golden. Add coconut milk and curry paste, mixing thoroughly, cooking 5 minutes. Add water chestnuts, brown sugar, and chicken pieces, simmering til chicken is done(5-10 minutes). Pour peas over the mixture, spreading evenly. Turn off heat. Cover for 5-10 minutes, allowing peas to heat through.
