Stephanie's Black Beans and Rice
This was a recipe I created one day when the kitchen was lacking food and I needed something filling.
It is great by itself and can also be used along with refried beans as a filling for burritos.
ingredients
- 1 can (15 oz) black beans and liquid
- 1 can (15 oz) diced tomatoes and liquid
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 jalapeno, diced
- 1 small can tomato paste
- 1 cup rice
- 1 1/2 cups water
- 2 tbs olive oil
- 2 tsp cumin
- 1 tsp chili powder
- Salt and Pepper to taste

In a large pan, sauteé the onion until translucent

Add the garlic and jalapeno and sauteé another 1-2 minutes

Add remaining ingredients, cover and simmer for about 20 minutes or until rice is tender.
