Mediterranean Chicken and Veggie Kabob/Wrap
ingredients
- 1/4 Cup fresh lemon juice
- 2 Teaspoons oregano
- 2 Tablesppons olive oil
- 1 1/2 Pounds boneless, skinless chicken breast , cut into chunks
- 18 1/2 inch slices of zucchini
- 1 Sweet onion, cut into wedges
- 12 garlic cloves, peeled
- Salt and pepper to taste

Put everything but the garlic into a Ziploc bag. Shake well and let marinate in the refrigerator for 20 minutes. Remove chicken and veggies and toss the marinade.

Boil the garlic to make it soft for a couple of minutes.

Thread six skewers with all of the chicken and veggies and grill them until done.

Stir fry them in a wok with Pam.

Low Carb Wrap - Use a whole wheat or oat bran wrap that has at least five grams of fiber per serving and some salsa.
