Corn and Zucchini Medley
ingredients
- 4 slices bacon, chopped
- 2 c. chopped zucchini
- 1 1/2 c. fresh or frozen corn kernels
- 1 small onion, chopped
- salt and pepper
- 1/4 c. shredded Monterey Jack cheese
- OR
- 1/2 c. feta

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Reserve 1 T. of drippings. Drain bacon and set aside

Heat the drippings in the skillet over medium heat. Saute the zucchini, corn, and onion until tender, but still crisp, about 10 mins. Season with salt and pepper. Sprinkle cheese on top and let melt for several minutes. Sprinkle with bacon.
